My cooking philosophy is very simple. To maximize the flavor of each ingredient and use fewer quality ingredients rather than use processed foods(better ingredients equals better results). You will also find that I try to use ingredients that everyone is familiar with and are readily available. Appetizers-and-dips.com offers cooking instructions that can easily be followed by beginners but will give you results like the pro's.
Here's an example of one of the easy to prepare, delicious make ahead party appetizers you'll find here, then I'll share my party philosophy with you.
Smoked Turkey Rolls
Ingredients
- 4 Large flour tortillas
- 1/2 lb smoked turkey
- 16 oz herb cheese (boursin)
- 8 romaine lettuce leaves
To assemble, lay out the tortillas, spread a thin
layer of cheese over entire surface.
Add a single layer of turkey and 2 slices of lettuce to
each tortilla.
Starting at one end roll tortilla as tightly as possible
jelly roll style, wrap with plastic and refrigerate
about 2 hours till the rolls get firm.
Unwrap the turkey rolls and cut even slices (sushi style).
Cut a few pieces longer and at a sharp angle(like the photo) to use as the
center of your serving tray.
* A less expensive option to the boursin is to buy a container of whipped cream cheese and add some chopped chives, minced red onion and finely minced roasted garlic.

*YOU'RE NOT THROWING A PARTY, YOU"RE PUTTING ON A SHOW!!*
My name is Paul and I am a musician, former Wine consultant
and Caterer with a long time passion for entertaining. I don't promote large scale events at NY city clubs anymore but I strive for the same effect. The typical party at my home has about 20-30 guests, an open bar, plenty of artfully displayed food, excellent music and a clublike atmosphere.
I want to teach you everything you need to know to put on a great show. I like to think of parties as MINI vacations. You can forget about everything for a few hours and just have fun.
I prefer to serve finger foods (Hors D'oeuvres) at my parties for the following reasons;
They're easy to pick up and eat.
One hand is always available to hold your drink.
Your hunger is satisfied all night without
feeling stuffed.
Promotes a festive atmosphere and more social interaction.
Your guests won't leave early because they pigged out when the buffet was served and got exhausted.
Less clutter.
Easier clean up.
You can spend more time enjoying the party.

This summer I launched my newsletter called Chef Paul's "Showtime", Every issue contains wine reviews, party tips, cocktail recipes and new finger food recipes. Special issues will feature complete theme party menu's. Also, in the near future I will release a great book I've been working on for a long time. I won't divulge it's contents, but check out the Chef-Paul page for a little insight as to the kind of stories and information I'm anxious to share.
Please go to virtually any page to sign up for my FREE newsletter. Here are a couple of wines that have been reviewed, you can read about them in the back issues once you've signed up! Both are excellent values for your holiday parties. The current issue has a review of Robert Mondavi Cabernet Sauvignon, and the last issue has the Miyone review which is in the photo below,

Please bookmark this site and visit often
as I will be adding new appetizer and dip recipes that pass my
demanding test kitchen criteria regularly. ENJOY !!!
